
Yogurt toast is a simple, healthy, filling, and satisfying breakfast that only involves 3-4 simple ingredients that you constantly have on hand in the fridge and pantry!
Coconut Cream Pie yogurt toast – a bit of an odd ball maybe, but certainly delicious. Coconut Cream Pie has always been part of my family’s thanksgiving table. I am not sure if it is for most other families, but for us it’s a classic!
I would say that out of any pie we make around the holidays, coconut cream is the most temperamental. I’m also not a huge fan of coconut cream pie, for that reason and others, but my husband loves it. So I went ahead and figured I’d create a yogurt toast for it. And what do you know, I love this pie in toast version. And so will you!
Coconut may seem quite tropical for a fall flavor, but something about the warmness that comes after toasting it makes it ideal for a chilly morning.

Here’s How to Do It!
The first step is to toast up your favorite bread (I usually use sourdough or this gluten free option). Next, I mix up plain greek yogurt (of course you can use dairy free yogurt if you need to – I’ve linked my favorite brand for you) with a little vanilla protein powder. Once mixed, we top the bread with the yogurt mixture.
Next, you’re going to toast some shredded coconut. I highly recommend toasting it! It adds a sweet nutty flavor, and this is what we do for every slice of coconut cream pie served on Thanksgiving! It just isn’t the same without that golden brown color.
And get ready – because the drizzle on this toast is OUT OF THIS WORLD! Yes, it’s a nut butter, but with a flavor that is so unique, but that pairs so well with the rest of this slice. I used THIS Aloha Nut Butter – a blend of cashews and macadamia nuts – is amazing! On this slice of toast, and on anything else you want to put it on 🙂
Helpful Hint: If your nut butter isn’t quite thin enough to drizzle, just add a touch of nut milk and mix together. But if you use the nut butter linked above, I guarantee it is the perfect drizzle consistency.
