
8 Ingredient Donuts, 4 ingredient crumble – PURE BLISS! There is no doubt in my mind that these SWEET POTATO CINNAMON SUGAR Donuts are a new favorite of mine – and will become one of yours too!
I am a sweet potato fiend – I can literally eat it in any way, shape or form. So naturally, I like to include it in my baked goods on occasion, and it truly adds such an amazing texture, and definitely hint of nutty sweetness!

So, I had a baked sweet potato sitting on my counter, not really sure what I was going to do with it yet. And then, I got a craving for donuts. And that’s how it happens. I have a craving, I see what I have on hand in my pantry, fridge, or freezer, and I make random baked goods that sometimes turn out to be AMAZING – as was the case here.
Those fluffy cinnamon sugar donuts you can get from a store – yea, these could rival them. They aren’t tossed in cinnamon sugar, but instead are topped off with a delicious cinnamon sugar crumble. And in my mind, crumble beats a coating ANY TIME!

These donuts are gluten, dairy and refined sugar free – but don’t let that gibe you the idea that they are bland, dry or tough. These are so light, airy and fluffy, and are anything but bland 🙂
The crumble on top was honestly a last minute decision, but definitely a good one. Crumbles are SO easy to make, but really add a little something something to baked goods. This one is made using 4 easy ingredients that you probably already have on hand – and really add to that cinnamon sugar flavor we are going for with these donuts!

Sweet Potato Cinnamon Sugar Donuts
Ingredients:
- 1 whole roasted sweet potato
- 2 eggs
- 1/2 cup coconut oil
- 1 tsp vanilla extract
- 1/2 cup cassava flour
- 1/4 cup coconut sugar
- 2 tsp baking powder
- 2 tsp cinnamon
- 2-3 tsp cinnamon
- 1/4 cup coconut sugar
- 3 tbsp flour
- 1/4 cup coconut oil (hard) or butter/vegan butter
Instructions:
How to cook Sweet Potato Cinnamon Sugar Donuts
- Preheat the oven to 350 degrees.
- In a large mixing bowl, combine roasted sweet potato, eggs, coconut oil and vanilla extract.
- Once combined, add in the flour, sugar, baking powder and cinnamon
- Pour batter into an oiled donut pan.
- In a separate mixing bowl, combine all crumble ingredients and stir with a fork until crumble forms – you may need to use your hands some
- Sprinkle crumble mixture (generously) over the donut batter.
- Place in the oven to bake for 25-30 minutes (check with a toothpick to ensure they are done)
- Let cool, then remove from pan and eat!
