Healthy + High Protein Strawberry Shortcake Pancakes

You can have IHOP at home with this decadent and delicious protein packed pancake stack!

Strawberry Shortcake pancakes made using just 3-4 ingredients, and the toppings are as simple as pie. All you need for the cakes is your favorite pancake mix (I use Birch Benders Protein Mix), egg whites, baking powder and water.

And the toppings are even easier – yogurt and strawberries!

To be honest, I’ve always been more of a waffle girl, but this last summer I started piling my pancakes high and coming up with all kinds of fun flavors for my stacks, and I may be converted. Just check out my maple brown sugar stack here – this was DELICIOUS!

Pancakes are so easy to make, are so filling and satisfying, and like I mentioned, you can come up with all kinds of fun flavors to try. Usually it’s the toppings that add the pizzaz to a stack.

Kept it pretty simple with just a few strawberries on this stack, but you could easily drizzle some nut butter, add some protein bar crumbles, nuts + seeds, cooke crumbles, I could really go on and on with topping ideas.

I’m going to let you in on a HUGE hint…

One REALLY important part of making a fluffy stack is making sure you let the batter rest for about 5-10 minutes after mixing it together.

This give the baking powder and egg whites a chance to really fluff up so that you end up with the lightest pancakes ever when you cook them!

Fresh and vibrant strawberry pancakes for one!

For the Pancakes

Instructions

  1. Blend all ingredients together in a blender. 
  2. Turn stove on to medium heat. 
  3. Let batter sit for 5-10 minutes before cooking. 
  4. Cook each cake for about 2-3 minutes on each side. 
  5. Remove and layer each pancake with yogurt mixed with monkfruit
  6. Top with additional chopped strawberries.
