
That classic snickerdoodle flavor in cake form! And you don’t even have to share! I love this mug cake and i’m not even a huge snickerdoodle cookie fan…shhh!
Cinnamon sugar has always been a great flavor for me, but for some reason the cookie just ins’t my favorite. So I challenged myself to come up with another single serve dessert with the same flavor profile that I could enjoy a bit more – and a mug cake was definitely the right choice!

I love mug cakes because they don’t take many ingredients, they use less dishes, the can be made in less than 5 minutes, and of course – they’re DELICIOUS! And this snickerdoodle mug cake fits all of those descriptions!
This cake is also gluten, dairy and refined sugar free – and we love that for those pesky allergies, or maybe digestive issues that some of us struggle with!

I used a special “cinnamon roll” coconut milk by Mooala (can be found in select grocery stores) for this cake, but if you can’t find that, normal almond or coconut, or even oat milk should work just fine! All the other ingredients should be things you probably already have in your pantry – so let’s get to it! PS – the frosting is just the cinnamon roll Mylk mixed with cinnamon and powdered sugar!

Snickerdoodle Mug Cake
Ingredients
- 1 egg
- 1 tbsp almond milk
- 2 tbsp oat flour
- 1 tbsp monk fruit sweetener
- 1 tsp cinnamon
- 1 tsp baking powder
- 2 tbsp powdered sugar
- 1/4 tablespoon milk
- 1/8 tsp vanilla extract
- 1/2 tsp cinnamon
Instructions
- Combine all ingredients in a microwave safe mug that has been oiled.
- Cook in the microwave for about 1 minute (until cooked through).
- Remove and top with glaze.
