
It’s summer! I don’t know about you, but when I think summer, I think about camping out. And when I think about camping out, I think about s’mores. So basically, summer = s’mores!
BUT, what if you don’t like camping out, or what if you don’t have a fire where you camp? does that mean you can’t enjoy s’mores?! Well, of course not! All you have to do is make these S’MORES BANANA BREAD MUFFINS!

These muffins will transport you to the campsite, sitting fireside with friends, enjoying freshly made s’mores, but without leaving your kitchen 🙂 All the makings of a s’more (cinnamon, chocolate, marshmallow) come to gather in this simple and delicious muffin to recreate that classic dessert!
Maybe you’re thinking it sounds complicated – a muffin surely has more than the three ingredients it takes to make a S’more. And although that’s true, these muffins are EASY as pie…

Completely gluten free and dairy free, these muffins only require about 8 ingredients! and even better, they only require 1 bowl to make!
Here’s what you’ll need to keep them gluten and dairy free: gluten free flour (I used Bob’s Red Mill Gluten Free 1:1 baking flour, but I think almond flour would work well too), coconut sugar, and dairy free chocolate (I use Hu Kitchen chocolate and you can get 10% off using THIS link). All of the other ingredients are pretty basic including bananas, eggs, maple syrup, cinnamon and of course – the MARSHMALLOWS!

S’mores Banana Bread Muffins
Ingredients:
- 2 bananas (mashed)
- 1/4 cup maple syrup
- 2 eggs
- 1/3 cup coconut sugar
- 1 1/4 cup gluten free flour
- 2 tsp cinnamon
- 2 tsp baking powder
- 1/2 cup marshmallows
- 1/3 cup chocolate chunks
Instructions:
- Preheat oven to 350 degrees.
- In a large bowl, combine mashed bananas, maple syrup, eggs and sugar.
- Once combined, fold in flour, cinnamon and baking powder.
- Pour 1/2 batter into a lined muffin pan.
- Stuff each muffin with a handful of mini marshmallows or one giant marshmallow.
- Pour the rest of the batter on top.
- Top each muffin with chocolate chunks and more marshmallows.
- Bake in the oven for about 40-50 minutes.
