Single Serve Sugar Cookie

The classic sugar cookie – but for one! I’m someone who likes their cookies thick, fluffy and on the bigger side. Those thin cookies never did anything for me, sorry! (PS – if you like the thinner cookies, just take out 1 tbsp of oat flour from this recipe and it’ll thin out a little more in the oven).

This sugar cookie is one of the best you’ll find, in flavor, texture and ingredients! She’s gluten, dairy and refined sugar free – and also VEGAN! PS – the icing on top, which I highly recommend adding, is also vegan (and only 3 ingredients). The total amount of ingredients you need for this cookie is 5 – that’s IT! One bowl, 5 ingredients, 10 minutes – let’s go!

Single Serve Sugar Cookie

The ultimate pillowy soft vegan sugar cookie for one!
Prep time: 5 MinCook time: 10 MinTotal time: 15 Min

Ingredients

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a small bowl, cream butter and monkfruit together. Then add in the vanilla extract. 
  3. Add in flour and baking powder and mix well.
  4. Scoop batter onto a lined cookie sheet and set in the fridge for about 10 minutes.
  5. Bake for about 10-12 minutes.
  6. Remove and LET COOL COMPLETELY!

Notes:

*2 tbsp oat flour will give you a thick, pillowy cookie. If you want a thinner cookie, remove 1/2-1 tbsp oat flour.
