Single Serve Deep Dish Chocolate Chip Oatmeal Cookie

Single serve cookies have quickly become a favorite! This one is loaded with chocolate chips and oatmeal, but is also gluten free, dairy free and refined sugar free! YES PLEASE! 

I mentioned before that the love for oatmeal and chocolate stems from my dad I’m pretty sure – and there’s no doubt that he would LOVE the single serve version of this cookie! I actually think next time I’ll make it double chocolate just for him ☺ BUT, let’s not get ahead of ourselves. 

I made this cookie using cassava flour – which has quickly become my favorite baking flour! It’s gluten & nut free, not refined in any way, and I just love the texture it gives all of my baked goods! 

I also used coconut sugar in this cookie, which is typically my go to sugar. It is less processed than the white sugar typically used in baking and I love the rich flavor it adds! 

And, drum roll please…..this cookie can be made in the MICROWAVE! It takes about a minute and a half (sometimes less depending on the strength of your microwave)! Yup, you can have a cookie all to yourself ready to eat in under 5 minutes – that’s what I call #winning! Next time you’re in the mood for a chocolate chip cookie – amp it up a little and try this OATMEAL CHOCOLATE CHIP cookie!

Single Serve Choc Chip Oatmeal Cookie

A giant chocolate chip oatmeal cookie for one!
Prep time: 5 MCook time: 2 MTotal time: 7 M

Ingredients:

  • 1 tbsp coconut oil
  • 1 egg
  • Dash of vanilla extract
  • 2 tbsp. cassava flour
  • 1 tbsp coconut sugar
  • ½ tsp baking powder
  • 1 tbsp oats
  • 1 tbsp chocolate chips

Instructions:

How to cook Single Serve Choc Chip Oatmeal Cookie

  1. Combine coconut oil and sugar in a bowl
  2. Add in egg and vanilla and mix until combined
  3. Add in other dry ingredients and stir.
  4. Fold in oats and chocolate chips
  5. Top with addition chocolate chips

Notes:

Cooking in the microwave will take 1.5 minutes, in the oven will take about 8-10 minutes.
