
Decided to remake my single serve banana bread – she needed a face lift. She’s back and better than ever! Dense, thick, oh, and did I mention, made just for one! No sharing required!

Made a few tweaks to the recipe, but she’s still gluten, dairy and refined sugar free. Oat flour has become my new staple gluten free baking flour and it works so well in this bread. Keeps the texture of the bread just like a normal loaf, but no slicing required!
You could send this over the edge by adding some walnuts, chocolate chips, or a drizzle of peanut butter on top!

Single Serve Banana Bread
Ingredients
- 1/2 mashed banana
- 1/2 egg
- 1 tbsp maple syrup
- 1/2 tbsp monk fruit sweetener
- 2 tbsp oat flour
- 1 tsp cinnamon
- 1 tsp baking powder
Instructions
- Preheat the oven to 350 degrees.
- In a small bowl, mash banana. then add in the egg, maple syrup and monk fruit.
- Fold in flour, baking powder and cinnamon.
- Pour batter into an oiled bowl/ramekin.
- Top with sliced bananas (optional).
- Bake in the oven for about 20-25 minutes.
- Remove and enjoy!
