Simple and Healthy Pumpkin Spice Cookie Dough Bars

We all know that cookie dough is better than cookies. We also all know that pumpkin spice is just the best. Well, at least some of us know that! So why not combine the two?

These gluten, dairy and refined sugar free PUMPKIN COOKIE DOUGH BARS are basically heaven. And did I mention how EASY they are to make?

No baking, one bowl and just a few simple ingredients is all you need and in just about 10 minutes you’ll have yourself some delicious cookie dough you can eat right off the spoon. And if you can hold off, and trust me, it was hard, you can make them into bars like I did by sticking them in the fridge to set up for about 30 minutes. But if you can’t, no worries, it tastes just as good from the bowl! 

But Did I Mention the Best Part?

These are no bake! So when you need a dessert that is quick, simple and made with all natural ingredients. Look no further!

Take these to a holiday party, a Friendsgiving, or a family get together and I promise you will be the talk of the town! Everyone will be wanting another slice, and the recipe so they can make them later!

Pumpkin Cookie Dough Bars

Cookie dough is always better than the cookie, especially when it’s pumpkin flavored!
Prep time: 5 Mininactive time: 30 MinTotal time: 35 Min

Ingredients

Instructions

  1. Combine all dough ingredients in a bowl. 
  2. Once a batter forms, place into a lined loaf pan. 
  3. Press chocolate chips on top. 
  4. Place in the fridge to set up for at least 30 mins to an hour. 
  5. Remove, slice and enjoy!
