Pecan Pie Mug Cake

Pecan pie flavor, without any of the work. That’s what I’m talking about. My favorite pie has always been pecan – well, at least for the last 5 years I’ve liked pie. Yup, I used to hate pie – don’t @ me, I just did. I was always more of a cake girl – which is why I took it upon myself to turn my favorite pie into a single serve cake. And it was a total success! Gluten, dairy and refined sugar free – what more could you ask for from pecan pie? 

After making this simple mug cake, I highly recommend drizzling (or slathering 🙂 ) on some more pecan butter and chopped pecans just to really get that pecan pie feeling! Pecans are, in fact, the best nut – don’t @ me for that either!

Pecan Pie Mug Cake

Pecan Pie in cake form, and single serve! Sounds perfect to me!
Prep time: 2 MinCook time: 2 MinTotal time: 4 Min

Ingredients

Instructions

  1. Combine pecan butter and egg in a bowl. 
  2. Add in flour, sweetener and baking powder. 
  3. Fold in chopped pecans. 
  4. Pour batter into an oiled mug. 
  5. Cook in the microwave for about 1.5 minutes. 
  6. Remove, let cool, top with more pecan butter and pecans.
