
Single Serve PEANUT BUTTER AND CHOCOLATE COOKIE – your prayers have been answered! You need this cookie in your life – and if you don’t believe me…well…I can’t help ya!
This cookie is gluten and dairy free, vegan, and paleo friendly! It loaded with good for you ingredients, is the ideal cookie texture (soft and light) and the flavor is out of this world! You won’t want to pass up this recipe! If you’re in need for a late night sweet treat, or a mid afternoon snack, this should be your go to single serve recipe!
To keep it vegan, I used plant based butter and applesauce to replace real butter and the egg that would typically go into a cookie batter. I also used almond flour to keep it gluten free – and of course no dairy for this lactose intolerant girl! In total, you will only need 7 INGREDIENTS – that’s it, just 7!! And just as a note, I used monk fruit sweetener as the granulated sweetener – but I think coconut sugar or cane sugar would work just fine – although I haven’t tested it yet.

Single Serve Peanut Butter and Chocolate Swirl Cookie
Ingredients:
- 1/2 tbsp vegan butter
- 1/2 tbsp granulated sweetener
- 1/2 tbsp applesauce
- 1 tbsp almond flour
- 1/2 tbsp cocoa powder
- 1/2 tsp baking powder
- 1/2 tbsp vegan butter
- 1/2 tbsp granulated sweetener
- 1/2 tbsp applesauce
- 1/2 tbsp peanut butter
- 1 tbsp almond flour
- 1/2 tsp baking powder
Instructions:
- Preheat oven to 350 degrees.
- In separate bowls, combine the ingredients for each cookie batter (wet then dry)
- Once batters are formed, scoop chocolate batter onto a lined cookie sheet, then scoop PB batter on top so they overlap.
- Bake in the oven for about 10-12 minutes.
- Remove, let cool completely and enjoy!
