Chocolate Olive Oil Bread

October 17, 2019

All Recipes, Breads, Sweet

Moist, chocolate, delicious. The three best words to describe this bread, and really, the three best words I could think of when combined! This quick bread is filled with heart healthy and clean ingredients, and did I mention there’s only 5 of them.

I recently discovered that olive oil isn’t just great for cooking, it’s perfect for baking as well. It can really transform your baked treats into something even more rich and delicious! And who doesn’t want that! Olive oil is a great alternative to butter since it is LAODED with anti-oxidants and monounsaturated fats. It is also proven to prot4ect against heart disease and has anti-inflammatory properties!

Now let’s talk about the chocolate part 🙂 This bread is super rich with chocolate flavor from the cocoa powder – but I also want to warn you, that when I say rich, I mean it. Since there isn’t any formal sweetener used in this loaf, the chocolate can be pretty strong. If you prefer the bread to be a little sweeter, I recommend swapping out the sunflower seed butter for almond butter, or adding a touch of maple syrup or honey into the batter. But if you aren’t scared of a little punch when it comes to chocolate flavor – don’t modify it at all!

This recipe calls for only 5 ingredients that I know you will already have on hand. Sunflower seed butter (which as I mentioned, can really be subbed for any nut butter of choice), olive oil (which makes the bread so moist), eggs (I haven’t tried making this vegan yet, but if you do and it works – let me know!), cocoa powder (I used an extra dark chocolate version because I just LOVE chocolate), and baking powder! Thats IT! And I always say that the added chocolate chips on top are optional – but c’mon, you can’t really leave them off!

Prep Time: 10 minutes

Cook Time: 30-35 minutes

Total time: 40-45 minutes

Ingredients:

  1. 1/2 cup sunflower seed butter

  2. 1/4 cup olive oil

  3. 3 eggs

  4. 1/3 cup cocoa powder

  5. 1 tsp baking powder

  6. chocolate chips (optional)

Directions:

  1. Preheat oven to 350 degrees

  2. in a medium mixing bowl, combine all wet ingredients (sunflower seed butter, eggs and olive oil)

  3. Once combined, add in the cocoa powder and baking powder. Stir until mixed thoroughly.

  4. Pour batter into a lined/oiled loaf pan.

  5. Top batter with ALL the chocolate chips (again, optional, but highly recommended)

  6. Bake in the oven for about 30-35 minutes or until cooked through.

enjoy!
