No Bake Pumpkin Spice Cheesecake

The name says it all – NO BAKE PUMPKIN CHEESECAKE BARS!

Okay, I guess it doesn’t tell you everything. Because it doesn’t tell you that these bars are: 

  • gluten free 
  • refined sugar free 
  • 5 ingredients 
  • DELICIOUS 

You will have these bars ready to go and setting in the freezer in no time. And then just a couple hours later you’ll be enjoying them with friends, family or just all to yourself! 

I’m actually not a big cheesecake person, but these no bake bars for some reason don’t make me think of cheesecake, they are just so good!

Pumpkin Spice No Bake Cheesecake Bars

No bake pumpkin cheesecake bars are the perfect dessert to take to any fall gathering!
Prep time: 10 Mininactive time: 2 HourTotal time: 2 H & 10 M

Ingredients:

For the Base
  • 1/4 cup melted coconut oil
  • 3/4 cup crushed cereal or graham crackers
For the Cheesecake
  • 1/2 cup  greek gods pumpkin spice yogurt**
  • 2/3 cup cream cheese
  • 2 tsp pumpkin pie spice
  • 1/2 tsp Xanthan gum if available, cornstarch could work too

Instructions:

  1. In a food processor, crush the graham crackers (or cereal) into fairly fine crumbles. 
  2. Add in coconut oil and mix until fully combined. 
  3. Press base mixture into a lined or oiled  loaf pan. 
  4. Set base in the freezer to set while you make the cheesecake layer. 
  5. In a bowl, combine all cheesecake ingredients. 
  6. Once batter forms, pour on top of base layer and set in freezer to chill for at least 2 hours. 
  7. Remove, drizzle with almond butter and slice. 

Notes:

**If pumpkin yogurt is not available, you can use normal yogurt and add more pumpkin pie spice and a tbsp of sugar.

 

This dessert can be kept in the freezer or fridge.
