
The name says it all – NO BAKE PUMPKIN CHEESECAKE BARS!
Okay, I guess it doesn’t tell you everything. Because it doesn’t tell you that these bars are:
- gluten free
- refined sugar free
- 5 ingredients
- DELICIOUS
You will have these bars ready to go and setting in the freezer in no time. And then just a couple hours later you’ll be enjoying them with friends, family or just all to yourself!

I’m actually not a big cheesecake person, but these no bake bars for some reason don’t make me think of cheesecake, they are just so good!

Pumpkin Spice No Bake Cheesecake Bars
Ingredients:
- 1/4 cup melted coconut oil
- 3/4 cup crushed cereal or graham crackers
- 1/2 cup greek gods pumpkin spice yogurt**
- 2/3 cup cream cheese
- 2 tsp pumpkin pie spice
- 1/2 tsp Xanthan gum if available, cornstarch could work too
Instructions:
- In a food processor, crush the graham crackers (or cereal) into fairly fine crumbles.
- Add in coconut oil and mix until fully combined.
- Press base mixture into a lined or oiled loaf pan.
- Set base in the freezer to set while you make the cheesecake layer.
- In a bowl, combine all cheesecake ingredients.
- Once batter forms, pour on top of base layer and set in freezer to chill for at least 2 hours.
- Remove, drizzle with almond butter and slice.
Notes:
This dessert can be kept in the freezer or fridge.
