No Bake Blueberry Crumble Bars

One last summer recipe before the cooler temperatures start to hit and the pumpkin and apples come in full swing!

When I saw that Ali from Kween & Co came out with a blueberry granola butter, my mind started RACING with all of the different recipes I could make. And trust me, this isn’t the last one you’ll see! But I thought a NO BAKE BLUEBERRY CRUMBLE BAR was just perfect for the end of summer, to use all those fresh blueberries, and to avoid turning on the oven while the summer heat is still here!

These bars are only 7 ingredients, are gluten, dairy and refined sugar free, completely vegan and SO delicious. If I do say so myself! I am a sucker for a good crumble, but I actually love that this crumble doesn’t require any baking and involves such minimal ingredients!

No Bake Blueberry Crumble Bars

Gluten, Dairy and Refined Sugar Free crumble that only requires 7 ingredients, is totally vegan and you don’t even need the oven!
Prep time: 30 MCook time: 2 hourTotal time: 2 H & 30 M

Ingredients:

Layer 1 (base)
Layer 2 (middle)
  • – homemade blueberry jam (heat up 2 cups blueberries with 2 tbsp sugar on stove top)
  • – 1 tsp corn starch or xanthan gum to thicken
Layer 3 (top)

Instructions:

  1. Mix all base layer ingredients in a bowl. 
  2. Once it comes together, press down into a lined loaf pan and set in the fridge for at least 30 minutes. 
  3. While chilling, heat up the blueberries and sugar on the stove top. 
  4. Heat for about 10 minutes, then add in the xanthin gum to thicken. 
  5. Remove loaf pan from fridge and pour blueberry jam on top. Set in the fridge again for another 1 hour. 
  6. While setting, combine all crumble ingredient sin a bowl until crumble forms. 
  7. Remove loaf pan one last time and pour crumble on top and press down slightly so that it sticks to the jam. 
  8. Set in the fridge for a final hour. 
  9. Remove, slice and enjoy!

Notes:

“Cook” time for this recipe is referring to chill time.
