
It’s finally October – my FAVORITE MONTH! My birthday, Halloween, and of course, it’s finally acceptable to make ALL the fall goodies! I am sure all you’ve been seeing lately is pumpkin this and pumpkin that, and usually I like to stray away from the typical and make something a little different. And although this is a pumpkin recipe, which makes me a little basic, I promise this is one that you haven’t seen before!

Enter – my PUMPKIN BANANA BREAD with COCOA CRUMBLE! Pumpkin and chocolate may seem like. strange combo – but trust me, it works! The bread is slightly sweet, and the cocoa crumble is a little bitter from the dark chocolate, which makes them the perfect harmony!
There is no gluten, dairy or nuts in this bread – so you can make it for anyone and everyone! honestly, it would be a great dessert for the thanksgiving table, or the perfect bread to serve at a halloween party! Heck, even the colors are perfect for halloween!

So let’s celebrate October by embracing ALL the pumpkin! I know this bread will certainly be on repeat over here. And after you make it once, I know you won’t be able to resist making it again and again!

Pumpkin Banana Bread with Cocoa Crumble
Ingredients:
- 1 banana
- 1/2 cup pumpkin
- 1 egg
- 1/4 cup maple
- 1 cup flour (cassava or whole wheat work, almond will too
- if you don’t need nut free)
- 1/4 cup coconut sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 2 tsp pumpkin pie spice
- 1/4 cup flour (almond, cassava or whole wheat work)
- 1/4 cup coconut sugar
- 1/4 cup cocoa powder
- 3 tbsp coconut oil
Instructions:
- For the bread, mash the banana in a large mixing bowl.
- Add in pumpkin, maple syrup and stir to combine.
- Then add the egg and mix until completely incorporated.
- Add in the flour of choice, coconut sugar, baking powder and soda and your spices.
- Mix thouroughly, but be careful not to over mix. Pour batter in a lined loaf pan.
- For the crumble, in a small mixing bowl, combine all ingredients and stir until a crumble mixture forms.
- Pour crumble on top of raw bread batter.
- Place in the oven and bake at 350 degrees for about 50-55 minutes or until cooked through.
