The Best Gluten Free Peanut Butter Cup Cookies

These Peanut Butter Cup cookies are basically everyone’s favorite candy bar in cookie form! That classic peanut butter and chocolate flavor combination pairs so perfectly in these light and fluffy cookies.

And what could be better than topping them off with some crunchy Reese’s pieces to really drive home the Peanut Butter Cup flavor?

You may think that these cookies are just a chocolate base with some crunchy peanut butter and chocolate candy on top, but you’d be wrong!

These cookies, without the crunchy candy added, include all the peanut butter and chocolate flavor all on their own. How you might ask?? By including peanut butter in the cookie batter, of course!

Not only does it provide the flavor we are looking for, but adding nut butter to a cookie batter also adds so much to the consistency. It’s that perfect soft, chewy, dense, but fluffy cookie we all know and love!

So what else makes these cookies Healthy and Gluten Free?

I’ve been able to keep these cookies gluten free by using oat flour instead of all purpose. I have found that oat flour works best as a gluten free option when trying to bake 1:1 with normal flour. The option I have provided via the link above is certified gluten free!

And another plus – they are lower in sugar thanks to the monkfruit + erythritol blend I used as the sweetener instead of sugar. That means the main source of sugar in these cookies comes from the candy pieces added on top, which you can totally control if you are looking to keep them lower in sugar for some reason.

You only need a few simple ingredients to create these cookies – and I know you won’t have any trouble finding the Reese’s pieces to go on top with Halloween right around the corner!

Peanut Butter Cup Cookies

These gluten free and low sugar cookies are like having your favorite PB cup candy in cookie form! Soft and pillowy cookies topped with little crunchy peanut butter chocolate candies!
Prep time: 5 MinCook time: 10 MinTotal time: 15 Min

Ingredients

Instructions

  1. Preheat oven to 350 degrees. 
  2. In a large bowl, cream together butter and monkfruit. 
  3. Add in the peanut butter and mix to combine. 
  4. Next, add in the egg and stir together. 
  5. Mix in the oat flour, cocoa powder and baking powder. 
  6. Scoop batter onto a lined cookie sheet. 
  7. Press Reese’s Pieces onto the top of each cookie. 
  8. Bake in the oven for about 10-12 minutes. 
  9. Remove + let cool!
