
I’m a huge gingerbread + chocolate fan. Okay, I’m a fan of anything with chocolate in it, but also with gingerbread, so this just seemed like a match made in heaven!
This simple mug cake for one is an easy holiday dessert that doesn’t have to be shared! Of course, several of us are home alone right now (thanks 2020) but you can make the best of it by making this cake!

This mug cake comes together in about 5 minutes, is gluten, dairy and refined sugar free and is just delicious! Moist, fluffy and packed full of flavor! I used oat milk and oat flour to keep the recipe nut free, but if that isn’t a requirement for you, you can definitely use almond milk and almond flour as replacements!
Also, if you don’t like the gingerbread chocolate chip combo, just don’t add the chocolate chips at the end (although I may call you crazy)!

Gingerbread Chocolate Chip Mug Cake
Ingredients
- 1/2 tbsp molasses
- 1/2 egg
- 1 tbsp monk fruit
- 1 tbsp oat milk
- 2 tbsp almond flour
- 1 tbsp coconut flour
- 1 tsp baking powder
- Choc chips
Instructions
- Combine molasses, egg, oat milk and monk fruit sweetener in a small bowl.
- Add in flours and baking powder and mix to combine.
- Fold in chocolate chips.
- Pour batter into a microwave safe oiled mug.
- Cook in the microwave for 1 minute.
- Remove, top with more chocolate and enjoy!
