
Sprinkles make everyone’s day a little better. So do cookies! So why not combine them?
That’s what I did when I made these vegan, gluten free, dairy free and flour free FUNFETTI PROTEIN COOKIES! From that description, you may question – so what’s in them? Trust me, these cookies are filled with nothing but deliciousness!

You start out with a base of cashew butter! If you are ever going for a cake batter for funfetti flavor, I always recommend using cashew butter – it just can’t be beat when trying to recreate that iconic flavor!
Then, you’ll add in some coconut oil, to help to cookies melt into those perfectly round discs. You’ll also need some apple sauce – this helps the cookies bind together, kind of acting as the egg since these cookies are vegan! Last wet ingredient – Monkfruit sweetener. this is my go to sweetener of choice, but you could probably sub in regular sugar or coconut sugar if you don’t have Monkfruit on hand!

For the dry ingredients, you don’t even need Flour – just 2 dry ingredients required. You’ll need about 2 scoops of the Ancient Nutrition Plant Based Protein Powder and baking powder – that’s it! If you don’t have access to the protein powder I used, 1. I highly suggest you order some (Ancient Nutrition is the best) or 2. just use your own vanilla protein powder, or sub in about 1/2 cup almond flour. I haven’t tested these alternatives, but believe they should work.
To finish, add in ALL the sprinkles! This is the fun part – but also – I always like to mention that you will need a specific kind of sprinkle in order to prevent “bleeding” of the colors. I highly recommend these Jimmie’s sprinkles that I buy off Amazon!
Funfetti Protein Cookies
Ingredients
- 1/2 cup cashew butter
- 3 tbsp coconut oil
- 3 tbsp apple sauce
- 1 tsp vanilla
- 1/4 cup Monkfruit sweetener
- 1 scoop Ancient Nutrition Vanilla plant based protein
- 1/3 cup oat flour
- 1 tsp baking powder
Instructions
- 1. Preheat oven to 350 degrees.
- 2. In a large bowl, combine cashew butter and monkfruit sweetener until incorporated.
- 3. Next add in the coconut oil, apple sauce and vanilla.
- 4. Add in dry ingredients and mix until combined.
- 5. Scoop batter onto a lined cookie sheet.
- 6. Bake in the oven for about 10-12 minutes
- 7. LET COOL COMPLETELY
- 8. Enjoy!
Notes:
Cookies need to rest for at least 30 minutes after coming out of the oven to ensure they firm up.
