
Just using the cinnamon sugar flavor combo in every dessert I can – cakes, cookies and now DONUTS!
The flavor never gets old, plus all the flaky cinnamon sugar on the outside just makes things more fun! We love messy food over here! But the real star of this show is the texture on this vegan, gluten free and refined sugar free donut! She’s light and fluffy, but holds her own to each bite!
Don’t let that fool you though – they are sweet, rich and would honestly be better than cake at a birthday party – in my opinion! Or better yet, suppose someone with breakfast in bed on their birthday with a batch of these!

These donuts are also perfect because the batter only makes about 4-6 donuts (depending on how full you load each mold). I enjoy small batch recipes because there’s less waste – but I still get to enjoy all the deliciousness for more than one day!
PS – for the yogurt in this recipe, I highly suggest using Culina yogurt. It’s by far the best when it comes to plant based yogurts, and since this recipe requires THICK yogurt, Culina will be your best bet to get the same texture I did.
All you need to make these donuts is one bowl, 6 ingredients and about 25 minutes! Let’s get to baking! Funfetti Donuts
Ingredients
- 1/4 cup olive oil
- 1/4 cup maple syrup
- 1/3 cup thick plant based yogurt
- 1/2 tsp vanilla extract
- 1/4 cup monkfruit
- 1 cup pancake mix (plant based to keep it vegan)
- 1 1/2 tsp baking powder
- 3 tbspsprinkles
- 3 tbsp vegan butter
- 1/3 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350 degrees.
- In a large bowl, combine olive oil, maple syrup, yogurt and vanilla.
- Next, add in flour, sweetener and baking powder. Then add in the sprinkles.
- Scoop batter into an oiled donut pan.
- Bake in the oven for about 15 minutes.
- While baking, combine all frosting ingredients in another bowl.
- Once baked, remove, let cool and then frost + top with more sprinkles!
