CELEBRATION TIME, c’mon! Let’s get to celebrating with this super easy FUNFETTI bread.

If you ask me, sprinkles make everything brighter! I used to hate sprinkles, I didn’t get the point of them, but man can they brighten your day! Sounds silly, but it’s so true! And at this point in time, we could all use a little extra sprinkle of fun and joy in our lives!

This bread is seriously SO easy to make, and would be the perfect alternative for you if you aren’t into cakes, are too scared to try making a cake of your own, or just really enjoy that funfetti flavor! So easy, in fact, I made it twice in ONE day! Yes, it’s that easy…and THAT GOOD!

My husband actually asked me to never make it again because he thinks its SO addicting! We’ at half the loaf in just 2 days…that’s saying something since there are only two of us here!

I’m sure you’re wondering now – how is this so easy! Well, all you need are a few pantry/fridge staples that I am sure you already have on hand!

To keep the bread gluten and dairy free, here are some of the ingredients I used (really go-to’s when baking for me): cashew butter, cassava flour, coconut sugar. Take those three, pair them with 3-4 more ingredients, and you’ve got everything you need to make this bread!

One IMPORTANT note I want to make is about the sprinkles! I highly recommend not using Non-pareils sprinkles, they will BLEED all into the batter. If you are going to fold sprinkles into the batter directly, I recommend using Jimmie’s sprinkles. Check the sprinkle bottle before adding!

She’s thick, dense, but yet light and fluffy. She’s got the perfect vanilla cake taste with sprinkles added throughout for the pop of color and joy! Top her with your favorite vanilla or funfetti frosting and you’ve got a loaf no one will be able to resist!

Funfetti Bread

The perfect gluten and dairy free bread for celebrating just about anything!

How to cook Funfetti Bread

  1. Whisk together cashew butter and eggs. 
  2. Add in maple syrup and whisk again. 
  3. Then fold in coconut sugar and whisk until incorporated. 
  4. Pour in flour and baking powder and mix until combined. 
  5. Fold sprinkles into batter. 
  6. Pour batter into a lined/oiled loaf pan. 
  7. Bake in the oven for about 45-50 minutes. 
  8. Remove, let cool, top with your favorite frosting! 

Notes:

PS – DO NOT use nonpareils as sprinkles. I would recommend using Jimmies.
PPS – If you don’t have cassava flour, almond flour will work as well (use the same amount)
PPPS – FROST with icing, it’s worth it!
