Walnut and Fig Oat Cake

A luscious and delicious breakfast cake packed with oats, and walnuts and fig jam!
Prep time: 5 MinCook time: 15 Mininactive time: 1 HourTotal time: 1 H & 20 M

Ingredients

  • 1/2 cup oats
  • 3/4 cup nut milk
  • 1 empty walnut butter jar (or another empty nut butter jar)
  • 1 tbsp maple syrup
  • 1 tsp baking powder
  • 2 tbsp fig jam (for topping)
  • 1 tbsp walnut butter (for topping)

Instructions

  1. In an empty nut butter jar, combine oats, 1/2 cup of the nut milk, and maple syrup. 
  2. Store oats in the fridge overnight (or for at least 1 hour). 
  3. In the morning, combine overnight oats, 1/4 cup milk, and baking powder in a blender. 
  4. Blend until smooth, pour batter into an oven safe bowl, bake for about 15-20 minutes. 
  5. Remove, top with yogurt, fig jam and more walnut butter
