

Walnut and Fig Oat Cake
Ingredients
- 1/2 cup oats
- 3/4 cup nut milk
- 1 empty walnut butter jar (or another empty nut butter jar)
- 1 tbsp maple syrup
- 1 tsp baking powder
- 2 tbsp fig jam (for topping)
- 1 tbsp walnut butter (for topping)
Instructions
- In an empty nut butter jar, combine oats, 1/2 cup of the nut milk, and maple syrup.
- Store oats in the fridge overnight (or for at least 1 hour).
- In the morning, combine overnight oats, 1/4 cup milk, and baking powder in a blender.
- Blend until smooth, pour batter into an oven safe bowl, bake for about 15-20 minutes.
- Remove, top with yogurt, fig jam and more walnut butter
