Double Chocolate Chunk Cookie

We all know the more chocolate the better. We also all know that desserts are better when they don’t have to be shared. So this double chocolate chip cookie has to be the ultimate dessert. – am I right, or am I right?

This cookie is so fudge, dense, decadent and rich. But she’s also gluten free, vegan, refined sugar free and made with some of the best ingredients! You would never know this didn’t come from a bakery – trust me – just give it to some of your relatives after making it! They’ll be shocked when you tell them 🙂 and that’s what I love about making treats slightly healthier – is that no one would ever know!

Double Chocolate Chip Cookie

A super chocolatey gluten free and vegan single serve cookie!
Prep time: 5 MinCook time: 12 MinTotal time: 17 Min

Ingredients

  • 1 tbsp flora butter
  • 1 tbsp monk fruit
  • 1/2 tbsp cashew butter
  • 1 tbsp cocoa powder
  • 1 1/2 tbsp oat flour
  • 1 tsp baking powder
  • Choc chips

Instructions

  1. Preheat the oven to 350 degrees. 
  2. In a small bowl, cream butter and monkfruit together. 
  3. Add in cashew butter and mix until combined. 
  4. Add in flour, cocoa powder and baking powder and mix well. 
  5. Fold in chocolate chips. 
  6. Scoop batter onto a lined cookie sheet. 
  7. Top with more chocolate. 
  8. Bake for about 10-12 minutes. 
  9. Remove and LET COOL COMPLETELY!
