Cashews have recently become one of my favorite nuts, especially in butter form! I’ve been whipping up cashew butter recipes like crazy over here, and this has to be one of my favorites so far. The cashew pair SO well with the sweet coconut, and the banana is mostly for binding and just a hint of sweetness.

And although it isn’t completely necessary, I highly recommend topping the loaf with added coconut flakes – they get all toasty in the oven and who doesn’t love some toasted coconut?

Coconut Cashew Banana Bread
Ingredients:
- 1 mashed banana
- 1/2 cup cashew butter
- 1/2 can coconut cream
- 1 egg
- 3/4 cup almond flour
- 1/4 cup coconut sugar
- 1 tsp baking powder
- Cashews and coconut flakes to mix in
Instructions:
How to cook Coconut Cashew Banana Bread
- Preheat oven to 350 degrees
- In a large mixing bowl, combine mashed banana, cashew butter, coconut cream and egg.
- Once combined, add in flour, coconut sugar, and baking powder. Mix until incorporated.
- Fold in cashews and coconut flakes.
- Pour batter into a lined or oiled loaf pan.
- Bake in the oven for about 55 minutes.
- Remove and slice!
