
Sneaking veggies into places they shouldn’t be is basically my M.O.
Enter ZOATs – yup, zucchini in my oatmeal because that’s how I roll. And it actually just adds a TON of volume to your oats without affecting the flavor! I’m all for a bigger bowl of oats! You can totally flavor it to be anything you want, and you won’t taste the zucchini at all. For my classic recipe, I just use some maple syrup and cinnamon to flavor!

One KEY step in creating the perfect ZOATs though is to drain the zucchini after grating it. If you don’t your oats will end up being super liquidy instead of thick and creamy from all the water in the zucchini. And when you think you’ve squeezed out all the water, squeeze again, because trust me you don’t want wet oatmeal.
Once you’ve got your zoats cooked, its just like normal oatmeal – go crazy with the toppings and enjoy!

Classic Stovetop Zoats
Ingredients
- 1/2 cup gluten free oats
- 1/2 cup water
- 1/3 cup grated zucchini (drained)
- 1 tbsp maple syrup
- 2 tsp cinnamon
- **other flavors you like**
Instructions
- On the stove, combine oats and water and cook on medium high heat until boiling.
- While oats cook, grate zucchini and then squeeze and drain until ALL water is gone.
- Pour zuchinni into pot and stir for about 2-3 minutes.
- Add in flavors and continue to stir for another 2-3 minutes.
- Remove oats, pour into bowl and add toppings!
