
Cinnamon Sugar Donuts just like you buy in the bake shop, but gluten free, vegan and much easier than frying! Just using the cinnamon sugar flavor combo in every dessert I can – cakes, cookies and now DONUTS!
The flavor never gets old, plus all the flaky cinnamon sugar on the outside just makes things more fun! We love messy food over here! But the real star of this show is the texture! Just because this donut is vegan, gluten free and refined sugar free doesn’t mean it lacks in fluff or deliciousness! She’s light and fluffy, but holds her own with each bite!

The base of this donut is a recipe I have used over and over putting different flavor spins on each time. However, since this Cinnamon Sugar version was the first one I ever made, it will always be my favorite.
But What Makes the Recipe so Good?
The pancake mix is the true secret when it comes to the recipe. I’ve tried using just normal gluten free flours (oat, almond, 1:1) and it has never turned out as well. For some reason the rise and fluff on the donut is just so much better when I use pancake mix! So i’m not questioning it!
To keep this recipe vegan, I used my favorite plant based yogurt. The yogurt has to be thicker consistency, which is why I used THIS one. If you try the recipe with a runnier yogurt (as most plant based yogurts are) it probably won’t work as well.
If you don’t require a vegan recipe, a good substitute for the yogurt I used would be a plain or vanilla greek yogurt!

Cinnamon Sugar Donuts
Ingredients
- 1/4 cup olive oil
- 1/4 cup maple syrup
- 1/3 cup plant based yogurt(thick)
- 1/4 cup monkfruit sweetener
- 1 cup pancake mix (plant based to keep it vegan)
- 1 1/2 tsp baking powder
Instructions
- preheat the oven to 350 degrees.
- In a large bowl, combine olive oil, maple syrup and yogurt.
- Once combined, add in sweetener, pancake mix and baking powder.
- Scoop batter into an oiled donut pan (batter will be thick).
- Bake in the oven for about 15 minutes.
- Remove, toss in cinnamon sugar mixture, and enjoy!
