
CHUNKY MONKEY COOKIE SKILLET – really what more do I need to explain? Chocolate, banana, peanut butter… if you don’t enjoy this flavor combination, I’m not sure we can be friends.
6 easy ingredients come together to make this skillet dessert. I really enjoy making cookie skillets over cookies sometimes because the edges of the cookie can get really brown and crispy thanks to the iron skillet, but the middle can stay soft and gooey. The perfect texture for a cookie in my opinion.

This cookie skillet is gluten free, dairy free, flour free and refined sugar free! So how do you make it, you ask? well, let me tell ya!
5 ingredients make up the base of the cookie – bananas, maple syrup, an egg, powdered peanuts and baking powder. And of course the chocolate comes in by adding huge chunks on top and letting them melt throughout the cookie. In my opinion, you could add chocolate on top of any baked good and it would be delicious, but it is absolutely necessary in this recipe to close out that Chunk Monkey flavor!
Also, I highly recommend adding a pinch of salt into the cookie batter. This ensures that you get that salty sweet combo as the bananas & maple syrup mix together with the salt and the peanuts.

This cookie skillet was made in a medium size skillet – about 8 inches in diameter. If you plan to make it in a bigger skillet than that, I would recommend doubling the ingredients to make sure you have enough batter.

PS: Just as a note, this batter makes enough to fill a small 8 inch skillet ($10 at Target), so if you only have a larger skillet, I would recommend making these into individuals.

Chunky Monkey Cookie Skillet
Ingredients:
- 1/2 banana
- 1/3 cup maple syrup
- 1 egg
- 1 1/3 cup powdered peanuts
- 2 tsp baking powder
- Pinch of salt
- Chocolate hunks
Instructions:
- Preheat oven to 350 degrees.
- In a medium bowl, combine mashed banana and maple syrup.
- Whisk in the egg.
- Add in dry ingredients (powdered peanuts + baking powder + salt)
- Fold in chocolate chunks
- Pour batter into a small skillet or baking dish.
- Bake in the oven for about 12 minutes.
- Remove and enjoy!
