
Chocolate covered strawberries in cupcake form. Literally, a chocolate cupcake, with a strawberry placed in the center, and covered with more chocolate. If I’m being honest, I think these may be better than the original.
There is more chocolate to enjoy with these, which is always the better option in my opinion. The cupcake is light and fluffy. The strawberry is a nice tart and sweet surprise. The chocolate buttercream (which is vegan) is buttery and smooth and rich.

So, let’s make them!
The cupcakes are easy because – well – I used box mix! Most of the time, I will work to create my own recipe. But, sometimes you just appreciate a little help. The Birch Benders organic cake mix works perfectly for this recipe. And the cake comes out with the fluffiest texture that I’m not sure I could recreate.
The filling is obviously the easiest part of this recipe. All you’ve gotta do is have some strawberries that have been rinsed with the leaves cut off.
And the buttercream, well, it may be the star of the show to be honest. It is completely vegan, but you’d never know that it didn’t include butter based on the texture! So smooth, so light, so fluffy and decadent! You can find the full recipe for the buttercream HERE!

Chocolate Covered Strawberry Cupcakes
Ingredients
- 1 boxBirch Benders Organic Chocolate Cake Mix
- Ingredients noted on Mix to make the cake
- Strawberries
- Link to my favorite Vegan Chocolate Buttercream!
Instructions
- Make cupcakes according to box.
- Scoop batter into a lined muffin pan (3/4 full), and press 1 strawberry down into each cup.
- Bake in the oven according to box instructions.
- While baking, whip together all frosting ingredients.
- Remove cakes from oven, let cool completely and frost!
