
Summer is here! And with that comes fresh berries – and nothing gets me more excited than fresh berries in my fridge! But sometimes I buy too many, and then run out of ways to use them.
In case you’re in the same situation, wondering what to do with all of those beautiful fresh strawberries you bought at the store – look no further! CHOCOLATE COVERED STRAWBERRY BREAD is the perfect way to use them, and to satisfy that sweet tooth!

This bread is gluten free, packed with delicious ingredients and is paired with a frosting that is a little off the beaten path, but truly delicious and add so much sweet flavor to this rich chocolate loaf!
I decided to include a sweet strawberry filling baked into the bread to give that extra pop of freshness. the filling is made up of just 3 simple ingredients – strawberries, xanthan gum and sugar. and in case you don’t have xanthan gum, don’t stress, just add a touch of cornstarch in its place! Also, the filling is completely optional, but definitely HIGHLY recommended to make the bread SO moist and super fresh and sweet!

I used almond flour for this bread, but I believe oat flour will work well as substitute, just in case you don’t have almond on hand. As far as the frosting goes, you can make it 100% vegan by substituting normal butter for a vegan alternative. I haven’t tested any substitutes, however, these are just recommendations just in case you don’t have some of the ingredients in the list below available to you.

Chocolate Covered Strawberry Bread
Ingredients:
- 2 mashed bananas
- 1/3 cup greek yogurt
- 2 eggs
- 1 tsp vanilla
- 1/2 – 3/4 cup almond or oat flour
- 1/3 cup cocoa powder
- 1 tsp baking powder
- 1/2 cup chopped strawberries
- 1 tsp xanthan gum
- 1 tbsp sugar
- 2 tbsp butter (can use vegan)
- 1/2 mashed Japanese or Hannah sweet potato
- 1/2 cup powdered sugar
- 1 tsp vanilla
- 1/2 cup chopped strawberries
Instructions:
- Preheat oven to 350 degrees.
- 2. In a large bowl, combine mashed bananas, yogurt, eggs, vanilla and sugar.
- 3. Once combined, add in dry ingredients and mix until batter forms.
- 4. To make the filling, in a saucepan on medium heat, add chopped strawberries.
- 5. Once simmering, add in the sugar and xanthan gum.
- 6. Heat until a jam consistency forms.
- 7. In a lined loaf pan, pour in half the bread batter.
- 8. Next, pour in the strawberry jam filling.
- 9. Pour second half of bread batter on top.
- 10. Bake in the oven for about 50 minutes or until cooked through.
- 11. While baking, combine all frosting ingredients in a bowl and mix until frosting forms. Fold in strawberries and store in the fridge until bread is done.
- 12. Top COOLED loaf with frosting, slice and enjoy!
