Chocolate Chip Oatmeal Cookies

These cookies are little bites of joy – that’s the best way to describe them. Chocolate pieces in every bite, but also loaded with oatmeal, so you can totally have them for breakfast – right? 

If you know me, you know I love oats, and I love chocolate – so why not combine them? Literally, I can eat oats all day, any day, every day. And I’m pretty sure the same could be said about chocolate. I know my love for both of these come from my dad – he’s a huge chocolate guy! He’s also the one who introduced me to oats several years ago, and now that they are back in my diet, they are NEVER leaving! 

So, if you’re looking for a cookie to dunk into a giant glass of milk after dinner, or a cookie to wake you up on your way to work – this one’s for you. It seriously works perfectly for both scenarios ☺ 

These cookies are gluten and dairy free, packed with oats and chocolate chips and may become your new favorite cookie! 

Yield: 9-12 cookies

Chocolate Chip Oatmeal Cookies

gluten, dairy and sugar free chocolate chip oatmeal cookies that are sure to satisfy your sweet tooth!
Prep time: 5 MinCook time: 10 MinTotal time: 15 Min

Ingredients

  • 1/3 cup softened vegan butter
  • 1/3 cup brown allulose sweetener
  • 1/4 cup white allulose sweetener
  • 1/4 cup almond butter
  • 1 egg
  • 1/2 cup almond flour 
  • 1/2 tsp baking powder 
  • 1/2 cup oats
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, combine softened butter and allulose sweeteners. 
  3. Mix in the almond butter and egg. 
  4. Then add in the flour and baking powder. 
  5. Fold in the oats and chocolate chips.
  6. Form the dough into cookies and place on lined cookie sheet (press the cookies down slightly and add more oats choc chips on top if desired).
  7. Bake in the oven for about 10-12 minutes.
