Cashew Quinoa Candy Bars

Making candy at home has honestly become a new habit of mine. It’s so easy, and I love that I get to control the flavor and ingredients!

I wasn’t quite sure what to call these candy bars – so LAYERED CASHEW QUINOA CANDY BARS it is. When all else fails, just list everything that’s included in them and you’ve got a name! 

If that name tells you anything, it should be just how simple the ingredients are that go into this homemade candy.  The entire recipe only calls for 5 ingredients, that I GUARANTEE you already have on hand! 

Craving candy, can’t get to a store, no worries – just bring up this recipe, give yourself 30 minus to an hour, and you’re ready to go!

The base layer is three ingredients – cashew butter (my current favorite nut butter), maple syrup, and almond flour. These three ingredients come together they create a fudge like base layer, perfect for the base of any no bake project, really.

The second layer – even simpler with just 2 ingredients! Maple syrup and cooked quinoa is all you need for the crunchy middle. Sounds like a weird combination, I know, but after putting them together, I’m convinced it’s a good combination. 

And lastly, the top layer is the simplest! All you need is to melt your favorite chocolate. I used Hu Kitchen bars because they melt the best without adding any coconut oil in. If your chocolate is fairly thick after melting, I recommend adding about 1 tbsp of coconut oil in to smooth it out. 

Now that you know how simple they are, are you ready to make your own candy at home? 

Yield: about 8 individual pieces

Layered Cashew Quinoa Candy Bar

Homemade candy can be just as good as store bought! And all it takes is 5 SIMPLE ingredients!
Prep time: 10 MCook time: 60 MTotal time: 70 M

Ingredients:

Layer 1 (Base)
Layer 2 (Middle)
  • 1/2 cup cooked quinoa
  • 1/2 cup maple syrup 
Layer 3 (Top)

Instructions:

  1. In a medium size bowl, combine all ingredients for the first layer (cashew butter, maple syrup and flour)
  2. Once combined, pour batter into a lined loaf pan and set in the fridge to set up. 
  3. While setting, in another bowl, combine cooked quinoa and maple syrup. 
  4. Pour mixture on top of first layer, and place back in fridge to set again. 
  5. While second layer sets, melt chocolate and coconut oil together. 
  6. Pour chocolate on top of second layer, and place in fridge one last time to set (at least 30 mins to an hour).
  7. Remove from fridge and loaf pan, slice, and enjoy! 

Notes:

“Cook” time in this recipe is total setting time in fridge.
