A Great Thanksgiving Breakfast: Pumpkin Pie Yogurt Toast

Yogurt toast is a simple, healthy, filling, and satisfying breakfast. It only involves 3-4 simple ingredients that you probably have on hand in the fridge and pantry!

Pumpkin Pie Yogurt Toast is for anyone who LOVES pumpkin. If you either can’t be bothered or don’t know how to make pumpkin pie, I’ve got you covered. Trust me, this slice of toast is just as satisfying but WAY simpler to make, and quicker too!

You already know my obsession with yogurt toast, and if you haven’t seen my other Pie Yogurt Toast Creations, you need to check them out. But this PUMPKIN PIE version is definitely a top on my list for fall! If I’m being honest, I don’t even like pumpkin pie that much. But I can eat this slice of toast every morning this fall and winter!

Pumpkin pie usually has lots of sugar and typically doesn’t contain much protein. Now, there is NO problem with sugar and low protein desserts. But if you are craving pumpkin pie for breakfast, then having this slice of toast rather than an actual slice of pie may be a more nutritious way to start your day!

Here’s How to Do It!

The first step is to toast up your favorite bread (I usually use sourdough or this gluten free option). For the yogurt part, there are a couple of paths you could take to create that pumpkin filling flavor:

Once your yogurt mixture is created, we top the bread with a large helping of it.

Next, you’ll need your favorite whipped topping, which could be cool whip, or reddi whip. I am actually a cool whip person myself. If you’ve never frozen cool whip before, you have to try it. Both will obviously work for that classic whipped cream that tops a slice of pumpkin pie.

And last but not least, we need the drizzle! You can truly use whatever nut butter you have on hand, but my recommendations would be: almond butter or pumpkin spice peanut butter for this one. I know that pumpkin pie usually doesn’t have nut butter on top, but hey, maybe it should!!

Helpful Hint: If your nut butter isn’t quite thin enough to drizzle, just add a touch of nut milk and mix together.

Yogurt toast can come in SO many variations (just check out all of my other Yogurt Toast creations for some inspiration). But, if you’re looking for a classic that will never get old, then this toast is simple and made just for you!
